My Little World.....

Happy Tuesday everyone!  Thought I would update you on what's been going on with me!  LOTS of things!  First I want to start with my BFF Emily because you have to go and read her personal story (its a dousy) and give her some love and support...she could really use it!  And speaking of Emily, she asked a couple of questions in a comment under the post I wrote for Tall's High School Graduation recently and I wanted to be sure to answer them here because I thought they were questions that everyone might want to know!

Emily:  Where were Mocha and Venti on this huge family day for Tall???? They aren't in the pictures; they weren't there! Where were they?!

Me: Mocha and Venti are currently living in Chicago! They moved there in February for his job (he works for the Federal Government) and is in a 2-year training program which includes LOTS of traveling! They are living with Mocha's sister and her hubby which makes it really nice for Mocha and Venti. They will be home toward the end of July where they will then be living with Mocha's parents. He will commute an hour to work until September when he moves to Los Angeles until mid December (she is not moving out with him...she will be visiting him once or twice...hmmmmmm..no one can figure that one out!) After Los Angeles his training is done and he will hopefully be able to work out of the office here in this city..so cross your fingers!!!

Emily: That is a HUGE and BEAUTIFUL auditoriom that they graduated in!

Emily:  Where is Kelsey going to go to college? 

Me:  Kelsey is going to West Chester (near Philadelphia)...but that may not matter (see below)

After graduation came Senior week.  That was hard to see Tall go.  He made it home safe and sound but without one thing.....his girlfriend!  Yep him and Kelsey broke up.  They actually broke up twice during the week.  She was also there but stayed down on 14th Street and Tall was up on 84th Street.  They have broken up before...several times...so we will see if they get back together or not!

School is out!  Short finished last Friday and Grande and Tall have been done.  I wish I could be home with them.  This is the first Summer that I have to work so I am really sad about that.  Speaking of work....I've been at my new JOB  for 4 months now.  It is going just okay.  I really like the girl that I am working with so that helps but I find myself wishing that I would have just left well enough alone and stayed where I was at!  And now the girl that I work with just told me that she is leaving the end of June because she wants to be home with her kids!  Well so do I!  But unfortunately I need the paycheck.  Oh boy...I don't know what to do!  I wish I didn't have to work an 8-5 job.  I have been thinking alot about what I could do and I haven't come up with anything yet!  If you have any suggestions, please let me know!!!

We leave for Mexico in 2 weeks.  They kids are very excited.  Their passports just came in the mail so we are all set.  I wanted to bring my phone and or laptop along and update you guys everyday but the internet is $15 a day and the data charges on my phone are outrageous so unfortunately a vacation it will be....meaning no electronic devices!  I will just have to update you when I get home!  I'll be sure to take lots of pictures!

Joe and I have been trying a low carb diet for a week now which is very hard for me because I seriously could live on bread alone and be fine!  So far I have lost 6.5 lbs which is really good for one week.  I started at 127 lbs which is a lot for me.  I want to be around 115 lbs so I will be bathing suit ready for Mexico.  I haven't been eating very much because I don't like a variety of foods.  I have 2 hard boiled eggs and 3 slices of bacon for breakfast.  A beef stick at my morning break.  Egg salad or tuna salad, a pickle and a sugarfree jello for lunch.  A handful of almonds for my afternoon break.  Dinner is chicken and snow peas, green beans or asparagus.  For an evening snack I have Creme Brulee!  Yep!  Believe it or not but it is low in carbs!   Here is the recipe if you want to try it!

Custard Ingredients
  • 2 cups heavy cream
  • 4 egg yolks
  • 1 teaspoon vanilla
  • 2 tablespoons granular Splenda
  • dash of salt
Topping Ingredients
  • 1 teaspoon regular sugar
Preheat oven to 350°F.
Warm cream in a saucepan over medium heat, until bubbles just begin to form. Remove from heat and set aside.
In a bowl, whisk together egg yolks, vanilla, salt, and Splenda. Gradually whisk in cream...do it slowly so you don't cook the eggs!

Divide into ramekins, then bake in a water bath for 25-30 minutes, until set but still jiggly. Chill for one hour.


 Sprinkle 1 teaspoon of regular sugar (has only 4g carbs!) on top of each ramekins.  Place ramekins under broiler in the oven until they start to bubble and brown.  Remove from oven and let cool before refrigerating.  Store them covered in the refrigerator and enjoy straight from the fridge!  They are so yummy!!!

  2. Thanks so much for the update. I'm sorry about the job situation. Could you do some kind of computer work for home, your own business maybe, or a situation where a company will allow you to work from home? Maybe if you could learn web design or graphics? How about medical transcription from home? You could be a proofreader for court stenographers or be their scopist. That's where you type up their transcripts. I used to be a court stenographer and would train and hire people to do these things for me. You would look in the phone book for freelance court reporting firms to find out the need. You could also be a proofreader for publishing companies. They could send you the manuscript and you could do it from home. Are you good at photography? You could have your own little business. What about tutoring at home? Tutors make pretty good money hourly. In our area, about $45 an hour. Or you could teach an instrument and have the students come to your home. You could find out where the homeschool groups are in your area and advertise through them for students for tutoring and/or teaching an instrument. You could also advertise to the colleges and schools, teacher supply stores, the library, etc. Another idea, is if you have a good speaking voice, is you could be a voice over person. Some jobs can be done at your home over the phone. The jobs outside the home are not very time consuming and it can be lucrative. I got paid $75 for a four second spot once. Hope these suggestions help.

  4. I hope you have a fantasic time in Mexico lucky you getting to go on a holiday........the recipe sounds yum but I an not much of a cook and would stuff it up somehow if it can be stuffed up I would manage to do it.............

    It sucks when you have to work because you need the money, I was lucky that I never had to work when my kids where little oh yeah we would have been better off if I had worked but I wanted to be a full time mum and we just made do, that said we didn't have a morgage as we live in subsidise housing.

    My brother has said if he didn't need the money he would love to be a house husband and spend all his time looking after his kids. His wife makes twice as much as he does.

    I have heard about a low carb diet and how does work.

    If only, it was a few pounds I had to lose or even be near 115.

  6. Oh, Mexico sounds wonderful!

    It is so hard for High School sweethearts and only time will tell if they will stand the test of time but it doesn't matter breakups hurt and we hate watching our kids hurt.

    You might want to consider Mary Kay, I know it sounds ridiculous but I do it for fun and make fun money. I know a lot of the women in my group that do it more seriously and around family time and they make SERIOUS money, several have quit full time jobs, teachers, lawyers and such because they wanted to make money but put their family first. The one good thing about Mary Kay, women wash it down the sink and they re-order, once I get a customer I almost always keep them!!! Food for thought!
