I envy you....

I get a letter in today's mail from our insurance company. It was a "friendly" reminder that Venti's birthday was soon approaching (April) and to remind us that since he will be turning 22, he will no longer have health care coverage! I did not know this! I did google it and this is what I found:

Parents need to be aware of the date when their health insurance coverage stops for family members. Usually when a child turns 22, marries, or joins the military, the health insurance company will stop coverage.

Venti doesn't graduate until May and will probably start working sometime after that which means he won't have health insurance for a couple of months! Guess I'll cross my fingers that he stays healthy!

So its Friday night and its just me and Tall home. Joe is working, Venti is at college, Grande went to the mall and Short went to his friends house! Going from having a houseful to just one child feels really strange. I can actually here things in the house that I didn't hear before. Tall came home from school and took a nap...that was 3 hours ago...so my dinner consisted of a bowl of Frosted Flakes! I sure hope Joe is hungry when he get home cause I'm going to need a big snack! We always have something to eat when he gets home which is bad because we are eating at 10pm. We usually have ice cream, a piece of cake, cookies, etc...I know...very unhealthy!

I should be working on my taxes or something but I just don't feel like it. I found out today that my job might be changing in the next couple of months to something that I do not like. Wish I was able to be a "stay at home mom"....being a mom is the greatest job in the world and I'd love to be able to do that. I'm sure alot of people feel the same way, so for all you Mom's that are able to do that, I envy you!!

Circle of Life

I decided to start blogging because #1 I love the computer...#2 I love reading other blogs...and #3 I wanted to document my life...at least from now on out. When I read other blogs I sometimes feel guilty for the uneventful life that I have. I read about miscarriages, illness, losing a family member, accidents, job losses, divorces, etc. Reading these makes me so sad for those involved. I am an emotional person anyhow....heck I cry over watching "Biggest Loser" and "Everyone Loves Raymond"...but reading these true life experiences really does effect me. I also like reading them to "see" and "hear" the happiness that does come after sad times and that brings a smile to my face.
One never knows when something tragic might happen...or when something fantastic happens...that is why I am realizing that life is so precious and it goes by so quickly. My boys seem to have grown from a child to an adult overnight! Where did the time go?? I can think back when Venti was 16..but where is 8, 11, 13?? Those years don't seem to be there in my mind and I just want to go backwards and relive them so that I can imprint them into my mind and never forget them.
When we have a baby, we can't wait for milestones like first tooth...sitting up....walking, etc...rushing them through life and before you know it, they are a teenager! How I wish I would have savored every moment...documented every little thing so I could look back and say, "oh yes...I remember that like it was yesterday"....growing old is hard for me. I am a little girl in my mind...wanting to say young...wanting my boys to stay young...wishing Joe and I were still in our 20's. Why is the cycle of life so sad? I don't know anyone that looks forward to getting old. I know its inevitable and because of that...I get a lump in my throat just thinking about it....

2. Email me a jpeg image (as an attachment) that you'd like to use for your button.  If you don't have an image then you'll have to tell me some suggestions of what you would like your button to look like and I'll find an image for you.

I make buttons for $10.00 which include the text box at the bottom. Your final product will look like this:

Overweight Child

Short is overweight. He is 9 years old and weighs 108 lbs....he weighs 3 lbs more then Grande who is 19 yrs old!!! I'm not quite sure either why he is overweight. He doesn't eat alot, but what he eats must be the wrong things. Plus he is a video game/computer junkie so that doesn't help! I thought for sure that once he started playing basketball in December he would slim down but he hasn't. I notice too when he is playing basketball that he gets out of breath. He also sweats alot. The doctor suggested things like no food after 6pm, drink only water, etc., we tried that for awhile and it didn't make any difference. Tall went through a chubby phase when he was in 8th grade but it didn't last but a year, but Short has been having weight problems now for the past 2 years.
Has anyone else had an overweight child? Have any suggestions?

Easy Amish Pot Pie Soup!! Fill Your Tummy Friday!!

Cooking for 5 boys is not an easy task! We do things LARGE around here! Especially when Venti is home from college. One thing that is a big hit in this house is my Amish Pot Pie Soup! It is sort of like Chicken Rival Soup. I make it without corn, but you could easily add it in...you could also add potatoes and/or celery if you so desire!

Here is how I make it:

1 Rotisserie Chicken (take off the bones and save the chicken and any extra juice in the bottom of the container and put into a bowl..put in fridge and save for later.


I use a 16 quart pot and fill it 3/4 full of water.
Leave it on medium heat and add 2 bags of frozen carrots (I used crinkle cut).

Add in 1 jar of Herbox:

Let that on the stove on medium heat for at least an hour.

Next you need 7 eggs in a large bowl:


Add milk...I don't measure, but its around 2 cups:


Whisk eggs with a fork:


Add enough flour so that the dough isn't sticky...you will probably need to add more as you make the rivals but for now add enough so that it get crumbly:



Turn the heat up to medium high while you are making the dough mixture.
Once it starts to boil, add in another jar of Herbox:


Now that its boiling start dropping very small dough pieces/balls:


Continue doing that until all the dough is used up..stirring occasionally...you may need to add more flour to the dough mixture if it is too sticky:


The pot will look very full of the rivals! Once all the dough is used, add parsley (use your own judgement as to how much you want to add)...then add the chicken...stir in the chicken and its ready to serve after about 5 minutes!


This makes ALOT! You will have lots for leftovers!


Although in my house, this is all I get!
